I Tried Blue Apron

So, I caved and finally tried Blue Apron. I got a hell of a deal, too. Some of my favorite podcasts (like SMNTY!) are sponsored by Blue Apron, so I used one of their promo codes to get $30 off.

But then I chickened out. I’ve talked too much smack about meal services! I cook every damn day. It’s 24/7 gourmet in my house. I couldn’t sell out like that. (My inner monologue is really modest, huh?)

But then I got an e-mail offering a promotional code for $40 off. Which means I’d get the first week (3 meals for 2!) for $19.99. How was I supposed to resist that? Plus, I’d just gotten an influx of cash from my bridal shower and I figured that the  brand new fancy flatware and new dishes deserved some thoughtful meals to go with them.

As I mentioned before, I’ve talked some smack about the concept of Blue Apron. Like, the notion that I wouldn’t already have basic healthy ingredients in my house is borderline insulting. But I can really see how, to someone who doesn’t share my rabid obsession for cooking, it is a really useful leg-up. The recipes are insanely easy to follow and meal-prep is pretty minimal. And they have a vegetarian meal-plan without being judge-y or charging extra (although let’s be real—vegetarian meals are way cheaper!)

Night One: Spicy Peperonata Pasta with Tinkerbell Peppers, Cherry Tomatoes, & Pine Nuts

I’ve got to hand it to them—this recipe was sensationally delicious. I didn’t even know Perciatelli pasta existed, and now that I’ve seen the light, I’m never buying spaghetti again. I’ve also wasted 25 years not putting capers in my red sauces—never again will I be so remiss.

Apart from these beautiful innovations, however, I felt a little stifled by the recipe. Me being me, I…improved upon this already solid recipe by adding sliced white onion into the base of the sauce, and replacing about 1/2 cup of the liquid with white wine. I also neglected to wipe out the pan after toasting the pine nuts, as any residue (I assumed) would add a lovely flavor profile to the foundation of the sauce. I was also able to cut the prep time in half with what I call “building”: instead of slicing the vegetables/ingredients ahead of time, I add ingredients to the pan one at a time prepping as I go, starting with onions and then moving to firmer vegetables and herbs. I am not what you call a “mise-en-place” chef.

All in all, it was a really positive experience, despite my incredulous Snap Story—they included a tiny baggie of pre-measured-out red pepper flakes &parmesan cheese! Who doesn’t have a jar of red pepper flakes and a block of parm in the house at all times?

Day Two: Summer Vegetable & Quinoa Bowls with Fairy Tale Eggplants, Shishito Peppers, & Corn

I ended up making this dish as a late lunch the following day. I figured since it was so veggie-heavy it would be a perfect midday meal. I had some leftover zucchini from the farmer’s market, so I added it into the recipe. I also went a little heavy on the rice vinegar and olive oil in the dressing to accommodate the extra veggie volume. Apart from those additions, I followed the recipe perfectly, which is almost impossible for me to do!


The bowls came out delicious, but I’m wishing that I had had my way with them. I’d definitely have added a clove of minced garlic to the dressing and some lightly-cooked sliced red onions to the top as a garnish. I think chopped basil might have also been a lovely addition. Ooh, or fresh cilantro!

It was great to use shishito peppers, an ingredient I’d never even heard of before. The eggplants were also fabulous! Eggplant is such an iffy veggie for me. I love it in a Parm, or in a seasoned “meat” -ball, but on its own the texture is usually slimy and icky. The large dice and the light sauté was transformative!

Even though this wasn’t a knock-out dish, it really gave me some big ideas. Cold marinated cucumbers on top of a hot bowl of vegan goodness? Sheer madness—but it worked. I paired it with a local rosé from the farmer’s market because apparently they sell wine at the farmer’s market every other week! So resentful of working every Saturday, I can’t even tell you.

Night Three: Couscous-Stuffed Zucchini with Goat Cheese & Summer Squash Salad

This dish was 50 shades of divine. Seriously ingenious. I’ll be making this frequently. I had a bunch of organic fresh green beans leftover from the farmer’s market so I added them in for more green-ness. The more veggies in any given meal, the better.

This menu was a little more involved than the others (it took a baking dish, a pan, and a pot!), but still was a breeze to whip up. I can’t believe how incredibly simple the vinaigrette was! Just lemon juice, olive oil, salt, and pepper. One of the best salad dressings I’ve ever had. The warm veggies on the cold arugula was a delight—something I’d never have thought of. Also, shallots! I love me a shallot! Shallots: garlic’s onion-y cousin. It’s truly a perfect food.


I was so pleased with this dish. I can’t extoll its virtues enough. The light, citrus-y flavor of the vinaigrette juxtaposed with the richness of the goat cheese made this the perfect summer dinner.

Some Notes

I think, overall, Blue Apron is an awesome service that promotes healthy eating and cooking. Not everyone has access to the incredible resources that people in more urban areas have (half the country is a food desert!) and organic produce isn’t growing in everyone’s backyard. My hope is that the people who use this service will gain skills that then translate to mindful grocery shopping, meal-planning, and more time in the kitchen.

They could definitely be more mindful about packaging, though. I know you can’t stick a block of butter in a paper sack, but there was so, so much plastic. There’s got to be a better way! Compostable containers, maybe? I’m going to reuse those insane giant ice packs that come in the bottom of the box for sure. They do include recycling instructions on their site, so at least they’re aware of the issue.

Also, vegan/gluten-free/allergy-conscious recipes! Some of the recipes accidentally fit the bill, but there isn’t a menu or option that ensures it. I’m sure there are a ton of people that would love to order this service, but can’t because of severe allergies. Inclusivity is everything.

I’m still iffy about whether or not I’ll order another delivery, unless I know in advance that I have a crazy busy week, but I’m glad I tried it. Instead of mocking those that don’t have an innate desire to concoct soup recipes and hone their knife skills, I’m going to do my best to be encouraging. It’s all about spending time in the kitchen! You can cook a Blue Apron meal in less time than it takes to order a pizza, and each meal is packed with nutrition. Anything that gets the average American to get his or her butt in front of the stove to make a mindful meal is good by me!

I Got My Hash Pipe

There is no food I love more than potatoes. Potatoes are the single greatest thing to ever grow out of the earth. Basically, you can do anything to a potato and it still tastes delicious.

One of my fave things to do to a potato is to make them breakfast-appropriate. We don’t eat your typical meat-and-potatoes diet (obviously), so incorporating my beloved potato into meals can be a tad difficult.

Thus, Lazy Sunday Hash was born! And yes, I’m making it on a Wednesday because I don’t abide by the rules of society. This recipe has the added bonus of minimal prep-time and effort!

hash with organic ketchup (for when you run out of eggs)
Lazy Sunday Hash

serves 2 very hungry people, or up to 6 reasonable people

  • 2 Russet potatoes, diced
  • 1 handful of fresh organic green beans, chopped
  • 1 handful of chopped scallions
  • 2 cloves garlic, minced
  • 1/2 red onion, chopped
  • 2 tbsp avocado or olive oil
  • 2 tsp paprika
  • salt & black pepper to taste

Preheat the oven to 350 (use that lovely roast setting if you’ve got it!)


Prep your veggies and put them all into a glass baking dish. Sprinkle on your spices. Toss in the avocado oil until well coated, and stick in the oven.


Slow-roast for an hour, removing and stirring every 15 minutes for even cooking.

**If you don’t have an hour to kill, set the cook temp higher and stir more frequently. The hash is done when the potatoes are fork-tender.


This hash is best-served underneath two over-easy eggs & a generous sprinkling of hot sauce!

Coconut Almond Butter Cookies (vegan optional!)

Have you ever gotten an intense craving for peanut butter cookies in the middle of the night for no reason? Me too, I feel you.

But sometimes, all you have is the fancy-pants freshly-ground peanut butter, so it seems a shame to use it in cookies.

But sometimes, you have a jar of homemade almond butter that you processed with coconut oil and cocoa powder just sitting in the fridge waiting to be used! So, obviously, cookies must be made!

I was lucky enough to receive a pink KitchenAid stand mixer at my bridal shower last month, and these cookies were just the thing to christen it.

I love that homemade cookies always look a little bit wonky.
Coconut Almond Butter Cookies 

Makes 2-3 dozen, depending on how large you like your cookies

1 1/4 c cocoa almond butter (recipe below)

1/2 c coconut oil

1 1/4 c packed light brown sugar

1 tbsp vanilla extract

3 tbsp unsweetened almond milk

1 3/4 c whole wheat flour

3/4 tsp salt

3/4 tsp baking soda

1 egg (or flax egg: 1 tsp flax meal mixed with 2 1/2 tsp of water)

Preheat the oven to 375. Line 2 cookie sheets with parchment paper. I use these!

In a stand mixer with the whisk attachment (or in a bowl with a fork if you’re a normal person), cream together the coconut oil, almond butter, brown sugar, almond milk, and vanilla extract until just combined. Slowly add in the rest of the ingredients and mix until just combined.

Scoop out the batter onto the parchment paper a tablespoon at a time. It will be very gooey, but the coconut oil will keep it from sticking. Once the cookie sheets are full, use a fork to make a crosshatched impression on the top of the cookies, because s’cute.

Bake for 8-10 minutes, rotating the trays halfway through cooking. I like to swap oven shelves at this time to make sure both trays cook evenly.

At (approximately) the 10-minute mark, remove the cookie sheets from the oven and let your cookies cool on a rack. They’ll still be a bit gooey, but don’t overcook them or they’ll turn to rocks. Gooey is good. Gooey means they’ll firm up to the perfect texture.


*Making the co-co-coconut almond butter:

Have you heard? Almond butter is the single easiest freaking thing on planet earth to make. It is the pet cat of foods—it requires minimal effort and doesn’t need any attention paid to it.

makes one lovely mason jar-full

3 c roasted, unsalted almonds

1 heaping tbsp cocoa powder (more if you love chocolate)

1 tbsp coconut oil

Put all the ingredients in a food processor and process on high for 20 minutes, scraping the sides intermittently if you need to. That’s it. The end result is a luscious, creamy heaven-sauce that tastes amazing on waffles, in yogurt, and in smoothies.

Endless Summer Southwest Salad

I was lucky enough to go to my town’s farmer’s market this morning, and took home a huge haul of organic veggies! In the blind panic of holy-hell-I-have-way-too-many-zucchini, I decided to create a summer salad inspired by my love of all foods southwestern. It took under 20 minutes to put together and it might be the yummiest thing I’ve ever made!

What you’ll need:


for the salad

2 ears corn, husked with kernels cut off the cob

1 tbsp coconut oil

1 zucchini, diced

1/2 small red onion (or 1/4 large), finely chopped

1/2 lb of grape tomatoes, halved or quartered

1 can black beans, drained & rinsed

salt & black pepper to taste

for the dressing

1 clove garlic, minced

2 tbsp lemon juice (about 1/2 a large lemon)

1/4 cup apple cider vinegar

1 tbsp vegenaise (or mayonnaise if that’s your jam)

1/2 tsp cumin

1/2 tsp coriander

1/2 tsp chili powder

1/2 tsp paprika

1/4 tsp cayenne pepper

1 tsp cilantro (I use Gourmet Garden cilantro paste)

salt to taste

To begin, set your oven to 400 degrees (if you have a roast setting, use this!) Remove the kernels from the corn cobs, toss in a bowl with 1 tbsp coconut oil, and lightly season with salt & pepper. Roast in the oven in a baking dish for 10 minutes, until lightly browned. Remove from the oven and let cool.


While your corn is roasting, prepare your vegetables, rinse your beans, and combine it all in a large mixing bowl. When your corn is cool, add it to the vegetable mixture.

In a blender, food processor, or with an immersion blender, combine all of the dressing ingredients. Add salt to taste. Pour dressing into salad and toss to combine.

Serve on top of a bed of greens, on its own, or as a side with burritos or enchiladas! Top with avocado if you’re feeling frisky!


This is summer in a bowl! So delicious and vegan!

I absolutely love the look of white leather. It’s just…so…impractical! I treat my leather very nicely what with the whole being-a-vegetarian thing, so I’ve been able to resist the temptation to get a bag that could so easily be destroyed.

Girly Dresses

Nothing like the end of summer to make you fantasize about…next summer. I spent most of my days off this summer doing home improvement projects in a tank and shorts sweating my butt off, so next summer, when I hopefully have a beautiful apartment worthy of Pinterest, I plan on lounging dramatically in floral dresses like a proper married lady. Or something.

So, who else is a huge fan of Twin Peaks? We had just watched the entire series when we got engaged, so the hashtag was born of a mild Coop obsession. Bear with us.


This weekend we had our bridal shower! I made Michael come because it’s the 21st century, damn it! Unfortunately, we have bi-coastal families, so the turnout wasn’t record-breaking, but we got some amazing, thoughtful gifts and I hugged so many Portuguese woman that I smelled of their perfume all day. I was blown away with the amount of love and support I received.

My sister-in-law-to-be, Erica threw the bash and she knocked it out of the park. She really took my one direction (all gold everything) to heart! I mean, the woman hand-made gold foil phrase art for me! She’s a saint.

My Maid of Honor/best friend Sarah introduced me to an amazing drink called the Statesman Sour. I’m not sure that we followed the traditional recipe exactly, but it’s Elderflower liqueur, white whiskey, lime, and bitters. Amazing. We even bought special cocktail glasses from Anthropologie for the occasion!

The food was…mildly out of control. I mean, look at this watermelon situation.

My mother bought a cake that could have easily fed 80 people. It was delicious, but I can’t give the stuff away! I brought so much food home from this thing that the bag broke and I spilled pasta and cantaloupe all over the driveway.

One of the best things that happened at the shower was that his mother majorly trolled us. We make fun of her constantly for her using inspirational phrases…ad nauseum. She bought us a wedding album that…was really her taste.

I’ll use it, but I won’t like it!

I’m so humbled by the amount of love we received this weekend. Love our family!

8 U.S. Cities I Want to Visit (Part II)

New Orleans, LA

NOLA is pretty much a no-brainer. I can’t believe it wasn’t first on the original list, tbh. History, music, Cajun food? Sign me up. You can throw your own parade with a police escort in New Orleans! It seems like such a vibrant, colorful city, and by all accounts it shouldn’t be missed. You can even stay in haunted hotels!

I’ve actually missed two opportunities in a row to go there (our cousin’s company hosts a retreat there), due to lack of funds & time. Next year, if they do it again, we’re GOING.

Palm Springs, CA

Okay, so my father is convinced I’ve been here before but I’m pretty sure that’s not true. Fancy hotels? Desert heat? Mid-century architecture? Sinatra? How do I not already live in Palm Springs? Bonus points that it’s only about 45 minutes away from my grandmother’s house. I’ll definitely be swinging through town next time I’m in Southern California…

Louisville, KY

So, in the same week last year I watched a documentary about the Louisville Orchestra AND actually met someone from Louisville! Trust me—you don’t meet a Kentuckian every day in Boston! From all accounts, it is exactly as adorable and cool as I envision it being. Also, nearby bourbon distillery tours? Kentucky Bourbon Ale is one of my favorite beers.

Louisville is about 3 hours away from Nashville, which might make it a little too far a destination for a honeymoon day trip…but we’ll see.

Omaha & Lincoln, NE

This one’s a twofer, since these cities are only about an hour apart. Omaha has been on my radar for a decade, because it’s famously the home of Saddle Creek Records. You know, as in Conor Oberst? It also gets name-checked in a great Rilo Kiley song, “The Execution of All Things”: let’s go to Omaha to work an exploit the booming music scene.

Boulder & Denver, CO

So, I guess by now you’ve deduced that The Stand by Stephen King is one of my favorite books. How else would a New Englander have even heard of Boulder?

I included these cities together because they’re about a half an hour apart (sorry, Telluride, you’ll have to be in Part III). Colorado seems like a land from a fairy-tale. I mean, look at that picture. How is that even real? I don’t think I’ve ever seen the Rocky Mountains apart from flying over them, but it’s always been a dream to view them in all of their majestic glory. My knowledge of America’s topography is (apparently) so limited that I’m now realizing that the Rockies feature in at least 2 of my other listed cities.

Boulder is apparently a “hipster’s paradise,” which to me signals coffee, tattoo parlors, and craft brews. I’m in!

Cleveland, OH

Okay, in truth, I only want to go here because of that episode of 30 Rock. And because the Rock and Roll Hall of Fame is there. Apart from those two tiny nuggets of knowledge, I’m clueless about the entire state of Ohio. But, as they (definitely don’t) say, cluelessness is the mother of exploration!

I will say, this post was originally written before the RNC, and now with the open-carry laws and stuff I’m a little wary…

Philadelphia, PA

I’ve actually been to Pennsylvania three times but never made it to either of the great cities it boasts (Philly & Pittsburgh). I’m something of a history nerd, and Philadelphia is such a historical hub (much like my hometown). I feel like it’s mandatory for every American to the Liberty Bell, or to tour the rooms where the Declaration was drafted.

I’ll pass on the cheesesteak, though.

Walla Walla, WA

Walla Walla is a city in the southeast corner of Washington. One of the colleges I wanted to apply to is there, and it also made an appearance in one of my fave YA novels from my younger days. I can’t say that there’s any specific reason that I want to go there. It’s just one of those names that sticks in your mind, and I’ve heard that Eastern Washington is stunningly beautiful.

Where else should I roam? There’s so much America to explore!

Spending Not-So-Fast

Oh, boy, have I failed at this experiment. The past two months have been a downward spending spiral. Which means that, starting next week, I have to recommit.

I think it might help to reestablish my needs list. It’s a core tenant of The Fast.

Needs:

  • student loan payments
  • car payment
  • cell phone bill
  • groceries
  • gas
  • toiletries
  • Netflix & Hulu subscriptions
  • 1 “luxury item” per week (bottle of wine, etc)
  • a dress for my bridal shower

That’s pretty much it. I have basically no excuse to purchase anything else. Especially with a wedding coming up. Hopefully posting this, publicly, will help me stay on track.

The “luxury item” shouldn’t really be a need, but severe restrictions tend to lead to spending rebounds. If I have it in mind that I can buy one little thing to keep myself sane, like a takeout coffee or some wine, I think it will help me ease into financial bad-assery again.

I don’t want my in-the-moment depressive bouts to affect my future.

Pod-Party Part 2!

Podcasts have become basically the most important part of my life, you guys. I hunger for more! But the two that I’ve fallen for in a big, big way since I wrote about this last are SMNTY & WTF. Acronyms!

SMNTY stands for Stuff Mom Never Told You. It’s run by two dope queens (but not those 2 Dope Queens…), Cristen and Caroline. So far I’ve listened to the episodes on A Practical Wedding, A Feminist Marriage, Lady Libido Liberation, and the trope Lesbian Bed Death. This show is like having a conversation with your best friend (if you happen to be a woke-ass lady with woke-ass friends). It’s so refreshing to hear this sort of talk outside of the classroom. I try my damnedest to approach everything in life through an intersectional feminist lens, so hearing the voices of like-minded individuals is reaffirming. They recently did a series on rom-coms that I can’t wait to listen to!

WTFPod

WTF stands, of course, for exactly what you think it stands for. Hosted by Marc Maron, who is one of my favorite comedians, WTF has some of the best guests in the game. Joanna NewsomAbbi & Ilana. Natasha Leggero. Ali Wong. It’s ENDLESS. Maron the show is based on his experiences doing the pod, and believe me, there’s enough material. WTF goes deep. I especially appreciate that Maron talks about his experiences as a man with an eating disorder, because that’s a large subset of the population that gets NO attention. As someone who has experienced disordered eating and still struggles, the episode with Nikki Glaser really spoke to me. I listened to it today, and it struck a damn chord. I was never in real physical danger (thankfully), but the mental state that accompanies eating disorders and food issues is intense, and it can manifest dangerously in a lot of other ways—reckless behavior, drinking, drugs, etc.

Oh gosh, look at me. Tryna talk about podcasts and delving into the darkness of eating disorders. For another day and another post.

Podcasts, man. As I’ve described them to my dad, it’s like NPR all day but 100% interesting all the time. But alas, my dad still doesn’t know what podcasts are. I’m not even sure he truly understands what an mp3 is. Either way, I’m so glad I discovered this *free* form of entertainment, finally!

Rosé All Day

It’s July, and I’m not sure if this is an official thing or not, but I’ve transitioned into a rosé-only diet. As in, I’m only drinking rosé right now. Girly pink wine, right?


Hell no. I think you’re thinking of white zinfandel, which is a literal abomination. It’s what high school Chelsea drank when she was first getting into wine, and it’s humbling every time I see a bottle to know that I was once so basic.

Rosé is the perfect middle ground if you’re like me and love the richness and flavor of red wine but love even more the drinkability & (literal) chill of white wine. It’s not like they mixed half a bottle of each and called it a day, but I don’t own or work at a vineyard, so I don’t know how they make it. Google it! Vast internet!

So, this is what I’m drinking right now. As in right now. The picture above with the strawberries? Half full at the moment.

Dark Horse Rosé (Limited Release!)

This wine so faaaancy it’s not even on their website! Just kidding, it cost me $6 at Wegman’s. And when I searched their “where to buy” with my zip code, they sell this rosé at the sketchy convenience store/liquor store down the street from my house! Finally, a reason to actually enter that building! All jokes aside, this is a tasty, tasty wine. I have no clue whether it earns a coveted 90+ points on the wine snobbery IQ test, but it tastes very good, and even more heavenly with the addition of chopped strawberries. My favorite summer thing is to put chopped fruit in wine. Watermelon in Chardonnay is a particular fave.

I appreciate that my wine tastes haven’t gotten too high-brow (I do have some limits though—I’m looking at you Charles Shaw), because it allows me to take occasional chances on cool-looking labels. You know I’ve had the Katy Perry song stuck in my head all afternoon…

Ruby Red Grapefruit Rosé

This wine. Oh my. This is the third bottle I’ve purchased. Yes, that’s right, I have spent $27 whole dollars on this stuff. My ex-boyfriend from high school Snapchatted me a bottle of this wine because that’s how hardcore I am about it. It suggests sweetness without actually being sweet! That’s my favorite taste! It is so grapefruit-y though. You have to be about grapefruit to like this. Sometimes I forget there’s even alcohol in it. It’s liquid summer. Literally if you comment on this post I will ship a bottle to your house if that’s even legal in these United States. Can’t wait to drink this with La Croix Pamplemousse when my best friend comes home IN THREE WEEKS.

I’m buying a case of it soon, because that beautiful Wegman’s display isn’t going to last forever. I might smuggle it into my wedding. I might drink a bottle of it at 10 am on my wedding day because holy shiiiiit you guys, I’m getting married.

I’m gushing…must be the 2 glasses of rosé I thirstily downed while listening to my new favorite podcast Stuff Mom Never Told You and doing housework/garden stuff.
